If you make sure that vrr is turned on through your ps5 settings and your tv settings, and then in game you put it on quality mode and high frame rate that will give you a locked 40fps and yes I know that isn't 120fps but your tv will output as 120hz that is if everything is setup correctly.

The second performance mode is essentially "uncapped FPS" as the game very rarely actually gets to 120FPS but rather sits around 80-100.
